Pancakes
Ingredients:
1 C Shaw's Brand Essential Everyday Original Pancake Mix
1 egg, beaten
¾ C milk
1 TBSP applesauce
½ tsp cinnamon
Directions:
In a large measuring cup, beat the egg with a wire whisk.
Measure the milk and the applesauce and add to the egg mixture.
In a separate bowl, measure the mix and the cinnamon.
Stir dry ingredients together until blended and then add to the wet mixture.
Stir everything together with a large spoon until all of the mixture is wet. Do not over mix! Keep the lumps!
When all of the ingredients are mixed, turn the skillet on to 350°.
When a few drops of water “dance” on the surface, the skillet is ready to use.
Spray your electric griddle lightly with oil while batter "sets".
Pour the batter onto the griddle, making pancakes of no more than 6" in diameter.
When bubbles form on the surface, turn them over and cook for one minute.
**Do not press down on the pancakes or they will lose their light, airy quality and become tough!**
Enjoy with warm maple syrup!
